The Vegetable & the Butcher ("V&B") is a retail/restaurant concept specializing in prepared/prepackaged foods that cater primarily to specific diets (e.g. vegan, vegetarian, paleo). Our menu is designed and conceived by a fine dining chef, approved by a registered dietitian, and seasonally focused. “The Vegetable” is a nod to one of our co-founders, who has been vegan for more than eight years, while “The Butcher” represents one of our other co-founders, who has subscribed to a paleo diet and lifestyle for more than five years. Our primary target customer is socially active and environmentally aware, dedicated to health and wellness, and devotes significant time and money to exercising and eating right. Our ideal customer also has a strong desire for food information and transparency regarding what they eat. Target age range is 25 to 40, mostly women. For additional context, our founders are a young couple with what are [seemingly] contradictory dietary preferences/requirements (vegan meets paleo). V&B is symbolic of not only our relationship as a founding couple, but also our belief that people with different dietary beliefs can do more than just coexist; they can thrive. Our focus is on sourcing real, wholesome ingredients from sustainable farmers and purveyors. We are diet-agnostic and believe that individuals deserve individualized diets; what's important is not the specific diet, but a focus on high-quality ingredients prepared properly.
